Fusion Dish PBL Project

Have you tried a cronut, waffle taco or sushirrito? Chefs can use fusion dishes to create new interest in their business. In this 4-part series, students will be exploring fusion cuisine, cooking a fusion dish, writing their own fusion recipe and creating their own dish to promote on social media. In lesson 1, students will be introduced to a chef who created a fusion dish by mixing his Korean background with Mexican cooking techniques. He used twitter to introduce it to the world and became one of the industries top chefs. Students will also be researching cuisine flavor profiles around the world. Lesson 2 begins with a teacher-led demonstration of a fusion dish and students practicing their skills in the kitchen lab by recreating the dish. Lesson 3 has students mashing up two different types of cuisine in order to write a unique fusion recipe. Lesson 4 is the culmination of the project, which has students creating their fusion recipe in the lab and posting a photograph, with hashtags, on a social media platform.
